The peeled new shoots and fast-growing tips of a number of edible sumacs (genus Rhus) make good trail snacks. These small trees have elongated, pinnately compound leaves that burst from the growing tips like palm leaves. To date I have enjoyed those of staghorn sumac (Rhus typhina) and smooth sumac (Rhus glabra). Both have serrated leaflets, and staghorn sumac has fuzzy stalks.
